We have homemade popsicles in the freezer at all times, even winter.  They’re a quick, easy, and healthy snack. We make smoothies several times a week and I always pour whatever is left in the food processor into popsicle molds.

Recently I’ve tried my hand at making popsicles inspired by some of our favorite desserts. I LOVE cheesecake and so I decided that strawberry cheesecake popsicles would be a good one to start with. I had high hopes for the recipe I came up with and the popsicles did turn out to be a delicious treat…except that they didn’t taste like strawberry cheesecake, they tasted like strawberry shortcake! No matter – I love strawberry shortcake too and the popsicles were tasty and satisfying. My son (age 4) couldn’t get enough of them and between the two of us we easily polished off all six of them in a couple of days.

I’ve now made two versions of these popsicles. One that is a nice, smooth, basic popsicle (pictured above) and another that has layers of faux shortcake added in (see below). I like the first version. My son prefers the second. Why not make them both and decide for yourself? :)

Homemade strawberry shortcake popsicles. A yummy guilt-free snack!

 

Strawberry Shortcake Popsicles

Serves: 6
 
A delicious, guilt-free snack or dessert. Great for the kids!
Ingredients
  • ½ cup Greek yogurt
  • ½ cup light cream cheese
  • 10 large strawberries
  • 2 tsp honey
  • ¼ tsp vanilla
Instructions
  1. Combine all ingredients in a food processor until smooth
  2. Optional: add layers of "shortcake". In a small bowl mix together ⅓ cup oats, 1 tsp melted butter, and 1 tsp ground flax. Alternate thin layers of oat mix with thicker layers of strawberry mix.
